Tailgating for Talladega

NASCAR is racing at Talladega Superspeedway this weekend.  I’m excited for the tight racing that I know we will see in the GEICO 500.  Because I don’t want to miss any of the race, for our tailgate, we will be doing a build-your-own hotdog bar.  Hotdogs are great race day fare, and I just couldn’t settle on one type this weekend.  Instead, I’m lining up a ton of toppings and different types of ‘dogs for us to build our own.  This way I can set it all up and not miss a minute of the race.  We may even come up with a new favorite, too!

I’m starting with four types of hotdogs.  You can choose any kind that strike your fancy.  I went with Earl Campbell’s Red Hot Link, Opa’s Bratwurst, HEB Bourbon Barrel Beef Smoked Sausage, and a traditional bun length hotdog. Mike grills our hotdogs and sausages on his charcoal grill.

I add a ton of toppings to choose from.  You can customize these any way you want.  I included coleslaw, pimiento cheese, hot cheese with chorizo, chili, Mexican cheese blend, cheddar cheese, green onion, white onion, red onion, dill relish, sweet relish, sauerkraut, cilantro, pico de gallo, guacamole, and chili lime Fritos. I also line up all the mustards and mayonnaise blends I have in addition to the required ketchup.  The mustards are grainy, honey, beer and yellow.  The mayo blends are jalapeno, chili and honey, BBQ, chili lime, roasted garlic and chipotle.

We are starting off with (left to right) a potato bun with a brat, sauerkraut, dill relish, white onion and grainy mustard; a regular bun, bourbon barrel sausage, white onion, sweet relish, cheddar cheese, yellow mustard, and BBQ mayo; a regular bun, regular bun length hotdog, chili, pico de gallo, Mexican cheese blend, and guacamole; a potato bun, red hot link, coleslaw and roasted garlic mayo.  The combinations are endless!  Mix and match to your heart’s desire! 

I’m washing it all down with a refreshing Tito’s and Topo with a wedge of lime.
