Georgia Peach Ring Cake

This week the Monster Energy NASCAR Cup Series is at Atlanta Motor Speedway.  Any time I think of Georgia, I cannot help but think of peaches.  In honor of the Atlanta location, I’m making a cake with peaches.  I decided to alter a favorite recipe of mine.  King Cake is one of our favorite treats.  Even when carnival season and Mardi Gras are over, we make it for all kinds of occasions.  We like it for breakfast as well as dessert.  One of my make-at-home king cake recipes can be adapted for all kinds of events.  The basic recipe was given to me by relatives in Louisiana, but I’ve tweaked it over the years.  Today I’m using fresh peaches as the fruit filling.  The filling can be any pie filling, though, if you want to switch it up.  For Christmas I like to use cherry pie filling!  Every time I make this, the compliments abound.  My guests are impressed I can make a “homemade” treat like this.  So, whip up a quick treat for today’s race that will make everyone think you’ve slaved in the kitchen all day!

 

 

 

 

Georgia Peach Ring Cake

2 cans crescent rolls

8 oz. cream cheese, softened

1/3 c. powdered sugar

1 tsp. vanilla extract

fresh peach sliced thin and sprinkled with cinnamon sugar

Glaze

1/3 c. powdered sugar

1 T. milk

splash of vanilla extract

Preheat oven at 350 degrees.  Beat cream cheese, sugar and extract together until smooth.  Separate crescent roll pieces of dough and arrange the pieces on 15 inch baking pan/stone with points in center.  Push the dough together to make it seamless around the circle, but leave the points free to fold over.  Spread cream cheese mixture around the dough in a circle.  Top with peaches.  Fold dough around the outer edge and also fold tips of dough from the center.  Bake for 25-30 minutes or until golden brown.  Mix together glaze ingredients and whip until smooth.  Drizzle the glaze over baked cake and sprinkle with cinnamon sugar.  Slice and enjoy!
