The Daytona 500 is like the SuperBowl in my house.\u00a0 Sometimes we go to watch parties, and sometimes we stay home.\u00a0 This year we opted for an at-home viewing.\u00a0 We set up optimum viewing with additional speakers attached to the TVs for the \u201cCrank It Up\u201d sections of the race.\u00a0 The race day menu for today\u2019s Daytona 500 will include some easier options since my full-time jobs of mom and educator limit my time!\u00a0 I\u2019ll be making some easy home prepared wings, potato salad, cheesy bread and strawberry cupcakes.\u00a0 Nothing fancy today, only some standard favorites.<\/p>\n

Maple Chicken Wings (courtesy of Food Network)<\/strong><\/p>\n

Ingredients<\/em><\/p>\n

3-4 pounds chicken: a combination of wing portion size and drumettes<\/p>\n

1\/3 cup teriyaki sauce<\/p>\n

\u00bd cup lite soy sauce<\/p>\n

2 T minced garlic<\/p>\n

1T garlic powder<\/p>\n

1 T onion powder<\/p>\n

\u00bd T black pepper<\/p>\n

1-2 cups maple syrup<\/p>\n

Directions<\/em><\/p>\n

Preheat oven to 350 degrees.\u00a0 Place chicken in large baking pan.\u00a0 Mix remaining ingredients and toss with the chicken to coat.<\/p>\n

Bake for approximately one hour, tossing every 15-20 minutes.\u00a0 The liquid evaporates the longer it cooks.<\/p>\n

After 1 hour, increase the oven temperature to 425 degrees.\u00a0 Turn wings to coat evenly and cook an additional 45 minutes.<\/p>\n

Hawaiian Cheese Bread\u00a0 (courtesy of Taste of Home)<\/strong><\/p>\n

Ingredients<\/em><\/p>\n

1 loaf (1 pound) Hawaiian sweet bread<\/p>\n

8 oz. grated Swiss cheese<\/p>\n

3 slices red onion, diced<\/p>\n

\u00bd cup butter, melted<\/p>\n

3 garlic gloves, minced<\/p>\n

1 t salt<\/p>\n

Directions<\/em><\/p>\n

Cut bread diagonally into 1 inch slices to within 1 inch of bottom.\u00a0 Repeat cuts in opposite direction.\u00a0 Insert grated cheese into bread.<\/p>\n

Combine remaining ingredients and spoon over bread.<\/p>\n

Wrap loaf in foil.\u00a0 Bake at 350 degrees for 25-30 minutes or until cheese is melted.\u00a0 Serve warm.<\/p>\n

Potato Salad<\/strong><\/p>\n

Here in Texas we all make potato salad, and there are infinite variations on the basic concept.\u00a0 I don\u2019t follow a recipe, I just work with the basics to make a version my family enjoys.\u00a0 The basic element, of course, is the potato.\u00a0 I use gold potatoes.\u00a0 I boil them in a large pot for about 45 minutes.\u00a0 For variety you can use red potatoes or russet potatoes.\u00a0 My family really likes the flavor of the gold, though.\u00a0 Once the potatoes are soft, I drain the water and let them rest and cool.\u00a0 If I try to use them too soon, they create a mushier salad.\u00a0 My family likes chunks of potato, so I let them cool completely before proceeding.\u00a0 Once cool, I remove the skin from the potatoes and cut them up in chunks, dumping them in a large bowl.\u00a0 I add lots of mayonnaise, so yeah, this is not diet food.\u00a0 I add and mix until I get the right consistency.\u00a0 Then I add some dill relish, pimento and very little sweet relish and very little mustard.\u00a0 We don\u2019t like our potato salad too sweet or too yellow.\u00a0 Then I add a generous amount of fajita seasoning.\u00a0 Basically, I add Fiesta Brand Fajita Seasoning to almost everything.\u00a0 I add finely diced white onion and celery for a little crunch.\u00a0 I try not to stir up the mixture too much, again to preserve the texture and not have too mushy of a salad.<\/p>\n

Strawberry Cupcakes<\/strong><\/p>\n

My family loves the plain old Duncan Hines box version.\u00a0 I do the Strawberry Supreme cake, prepared as cupcakes, and cream cheese icing.\u00a0 I make this to be easy on myself, and these cupcakes go fast around my house.\u00a0 I make them fit the event with a little race day decorating, and I\u2019m done!<\/p>\n
